Hello My Name is, Vincenzo Gilio The picture above is the
corner of Taylor St. and Racine Ave. I would like to
tell you a little about my self and how I grew up,
in Chicago, a place called little italy. The
Italians first began coming to Chicago in the 1850’s. By the
end of the 19th
century, they were immigrating to Chicago from Italy in rapidly increasing numbers. In 1900, there were 16,008 Italians in the city. By 1930, that number had multiplied by almost five. As they came here they started moving into the same neighborhood where all the Italians, were... That's how it became known as Little Italy. I have fond memories of my
childhood in this neighborhood, where people didn't have money,
to spend in restaurants to eat like we do today... These people were poor, they made their own food from scratch at home... they made soups, their own spaghetti, fettuccine, bread, pizza, in fact they even made their own Italian wine, and pepperoni, that they hung up in their basements to dry and cure. Do you think people do that today? You
have the right answer...NO,
It's too convienent to run out to McDonalds Or Burger King. Everything we made was
homemade with fresh ingredients. I can remember getting up on,
Sunday mornings and my grandmother and mother would be in the kitchen preparing dough, to make bread and bakery pizza for family that evening. All morning, I
would be smelling that bread that was baking in the oven, I
couldn't wait,
till it was done. I remember when the bread
cooled down, my mother would cut bread, and put butter on it.
She would pour a cup of coffee for my father, who loved to dunk his bread in his coffee. (Thats what Italian's do.) If you're Italian you know what I'm talking about. I remember those days like it was yesterday. It
was my herritage that gave me the inspiration
to develop my pizza dough recipe.
I started experimenting in 1984, trying recipe after recipe, without any success... My, Grandmother's taste just wasn't there. I
even searched on the internet for recipes... I found some that used a
special flour called,
double zero, but you can't buy that flour in your local grocery store... I had to order it from a company in Chicago, and still it was nowhere near the taste, of my Grandmother's pizza. Some
recipes claimed that sea salt was the answer, but that turned out to be
a bunch of hooie.
Finally,
after trying all these crazy recipes... I decided that I already had
the best recipe, my grandmother's recipe.
This
was the jewel I had for years and didn't need to be searching
for something I already had.
I
will treasure this the rest of my life, and it will be passed down to
my children.
